Ingredients

500g Chicken Boneless Breast (cut into pieces)

3tbspn Soy Sauce

2tbspn Black Vinegar

3tbspn Cornstarch

2tbspn Sugar

3tspn Toasted Sesame Oil

1 Capsicum Red (cut into piece)

1 Capsicum Green (cut into piece)

50g Leek

50g Cashews

10g Minced Garlic

10g Minced Ginger

30g Dried Red Chili Peppers (Option)

Directions

Make the Kung Pao sauce, mix the soy sauce, vinegar and sugar in a bowl.

Then, prep the boneless breast, toss it in little soy sauce and cornstarch to coat.

Cook the chicken until crispy. Stir-fry the chicken pieces in sesame oil until they’re cooked through and gorgeously crispy.

Stir-fry the red and green capsicum until they’re a little soft. Then add the leek, cashews, ginger, garlic and dried chili pepper.

Stir-fry all that for a minute, stir in the sauce and cooked chicken. Simmer, let all of the flavors meld over the heat for a few minute, until the sauce thicken slightly and really  coat the veggies and chicken.

Done. Can serve already.
